Happy National Spinach Day!
Isn’t it funny how there is literally a day for everything now? I’m totally okay with that. Who doesn’t need more reasons to celebrate?
Speaking of celebrating, I am so excited today is the day we get to celebrate this leafy, yummy vegetable called SPINACH.
Personally, I love spinach. I don’t know if it’s because my mom promised us we could grow muscles like Popeye if we ate it or what but spinach is by far my favorite leafy green! I love it in my salads, on sandwiches, cooked into omelets, but I REALLY love it in my smoothies.
While spinach is all great and stuff, the best thing about this recipe is: PEANUT BUTTER AND CHOCOLATE. When I hear that magical combo, I automatically start to salivate (is that too much to admit? Oh well). This smoothie is so good because while it has super duper healthy spinach in it, it also has the magical duo of PB & chocolate. You can’t go wrong with those two. EVER.
Anyhoo…I think most of us struggle to get enough vegetables each day but having this smoothie certainly helps you in that department. Nothing feels better than knowing you’ve crossed off one serving of vegetables first thing in the morning…and nothing tastes better than this smoothie! Especially since it seriously tastes like dessert.
Here is the recipe, enjoy!
In a blender (our favorite to use is Vitamix) place:
- 1 C spinach
- 1/2 of a frozen banana (I slice my bananas once a week, place one serving size in a baggie and make a stock pile in my freezer for fast & convenient smoothies)
- 8 ice cubes (or however many to your liking)
- 1 TB all natural peanut butter
- 2 TB PB Fit
- 1 scoop chocolate protein powder (Orgain is by far my favorite!)
- 3/4 C almond milk
Mix for a minute or two until your smoothie is chunk free!
