Flashback to 2011: I was living in Provo, Utah attending college at Brigham Young University. The Easter holiday was approaching and I, one who was known for dropping off cookies to cute boys from our church congregation, was in search of the best cookie recipe. I, after all, had some cute, semi-nerdy (ok, pretty nerdy) young men to impress.
Keep in mind that many of my adventures in the kitchen during college ended in disaster. Like the time I added 2 WHOLE garlic HEADS instead of 2 garlic cloves to a curry that I had made for a group dinner OR the time I wasn’t wearing any glasses/contacts (this was pre-lasik, I had the worst vision) and was craving cinnamon sugar toast and accidentally used CUMIN instead….ha! For the record, cumin sugar toast is not very tasty 😛
Anyway, back to this Spring day in 2011. Unlike these other misadventures I happened upon the BEST Cadbury cookie recipe ever. I made one batch and it seriously blew everyone’s minds! I mean, just LOOK at this cookie dough:
The recipe calls for you to crush Cadbury eggs and put it in the dough. I found that it is best to keep some big chunks as smashing them into tiny pieces takes away from the satisfaction of that creamy, soft, chocolatey goodness that is known as Cadbury! I also like to put whole or half pieces on top. They just melt in your mouth.
Needless to say, I did not stop at one batch back in 2011. My best friend (shout out KB!) and I have become quite the fangirls of these cookies and the minute Cadbury eggs are put on those glorious Target shelves, I can tell you one thing: there is a celebratory text between me and the bestie.
